Essentially you'll want to create shape layers in varying shades of gray and then color them in later, but this is the best for doing it. The color of other images doesn't distract your eyes.

Yeah, I would use groups for this. One main group, then groups inside it. Then just duplicate the main group, then resize to something appropriate, then color it.
